Product Ingredients and Nutritionals
Everyone at Against The Grain cares deeply about the ingredient quality and content of our products. Everything we use is simple, fresh, and recognizable as a bona fide food substance. As we all know, much processed food is full of ingredients that read like an advanced chemistry textbook. The industrialization of our food has moved into the gluten free world and now many gluten free foods are full of preservatives, additives, chemical binders, flavor enhancers, bio-engineered enzymes, and modified starches.
We want no part of this. We obtain our ingredients and raw materials from as many local sources as possible. Our dairy is McNamara Dairy in Plainfield, NH, and their milk contains no BHT, rBGH, or preservatives. We use expeller-pressed non-GMO canola oil. We use shell eggs from humanely-treated hens supplied by Maple Meadows Farms, in Salisbury, VT. Maple Meadow is a family-owned egg producer, and their birds are never treated with antibiotics or hormones. We use tapioca starch—not modified tapioca starch—in our ingredients, which is bleached in the production process, but it is not chemically "modified." Our coconut milk is 100% organic. Our cheese has no added growth hormones, no anti-caking agents, and is natamycin free, and it comes from the milk of dairy cows that are routinely veterinarian inspected.
Look at the Nutritional Information on our products, and you will see that we are serious about the simplicity and decency of our ingredients. You can recognize and pronounce every substance we use.
We're proud of the ingredients in all of our products and we want our customers to understand why. Below you'll see the list of ingredients for each of our products. Note the letter symbols after many of them, which list various attributes of each, such as Non-GMO, Fresh, Local, and so on. The key below explains each of the attribute codes used.
