What makes Against the Grain’s products different from other gluten-free breads and pizzas?
We’re so glad you asked — this is our very favorite topic! A lot of gluten-free breads in the market today are made using rice flour or gluten-free grain-based mixtures. These flours require the addition of gums and industrial ingredients (with delicious-sounding names like “enzyme formulations” and “chemical leaveners”) to bind them together or make them moister and lighter. We developed a recipe that allows us to go gluten- and grain-free while also avoiding any chemical additives. Everything in our products is all-natural (and easy to pronounce).

What is tapioca, and where does your tapioca come from?
Tapioca is a starch from the roots of the cassava plant. Remember those pudding cups you used to get in your lunch in elementary school? Same ingredient, different application. We buy our tapioca in large lots, primarily from Thailand, and each batch is independently tested for safety.
Are your cheeses rBST-free, and do they use animal rennet?
Our mozzarella, parmesan, and cheddar cheese is made with milk from cows not treated with rBST and is animal rennet-free. (In case you were about to Google it, rennet is an enzyme that helps coagulate the milk during the cheesemaking process.) Additionally, our cheese is free of anti-caking agents and natamycin (an anti-molding agent).
Do you use seed oil?
We don’t approve of industrially processed ingredients that use chemical bleaches, toxic deodorizers, or petroleum-derived solvents (like Hexane) in anything we do. Unfortunately, the majority of seed oils are industrially and chemically processed with the above (google it) in a way that adulterates the oil and renders it into something that we think humans should not (and, if they knew, would not want to) consume.
Do you only make gluten-free products?
Yes. We have our own dedicated facility that is gluten-free, grain-free, and nut-free.
What allergens should I be aware of when eating Against the Grain?
• Ingredients we use: Eggs, Milk, and Sesame.
• Ingredients we do not use & are not allowed in our facility: Wheat, Tree Nuts, Peanuts, Fish, Shellfish, or Soy.
Do all your products include eggs?
The majority of our products contain eggs. However, our pita bread is made without eggs.
How do you make pesto without nuts?
Magic! Just kidding. We use ground sunflower seeds instead of nuts for our Nut-Free Pesto Pizza.
